Tamam

Tamam occupies one of the most remarkable dining rooms in Crete: a converted Ottoman hammam in the heart of Chania's Old Town, where domed ceilings, stone arches, and warm candlelight create an atmosphere that few restaurants anywhere can match. The name itself, meaning agreed or fine in Turkish, speaks to a culinary philosophy shaped by the many cultures that passed through this harbour city over centuries.

The cooking is thoughtful and rooted in place. Chef Nikos Zervakis has refined his approach over decades, drawing on Crete's extraordinary larder: wild greens, fresh herbs, aged mizithra cheese, Cretan olive oil. These are combined with influences that arrived here via centuries of Mediterranean trade: saffron, cumin, pomegranate, tahini. The result is genuinely distinctive food that exists nowhere else.

Signature dishes include stuffed courgette flowers with anthotyros cheese and honey, lamb slow cooked with quince and warm spices, and a selection of small sharing plates that showcase the kitchen's range. The menu changes seasonally. Vegetarians eat exceptionally well here. In summer a small courtyard opens for outdoor dining, but the domed interior room is the reason to come.

What You Need to Know

📞Book at least 3 days ahead in July and August. Tamam has been fully reserved every summer night for twenty years.
🪑Ask specifically for a table inside the vaulted hammam room rather than on the street. The atmosphere is incomparable.
🍷Ask the staff for a Cretan wine recommendation. The local bottles are excellent and the team knows them well.
🥗Tell your waiter you are vegetarian at the start. The kitchen excels at building an outstanding meatless meal.
🚶Park near Plateia 1866 and walk five minutes into the Old Town pedestrian lanes. Follow signs to Zambeliou street.
