The restaurant represents contemporary Cretan fine dining: serious, technically accomplished cooking that takes the island's finest ingredients and treats them with the respect and precision they deserve.

The kitchen at Pallas is led by chefs who trained in some of Europe's better restaurants before returning to Crete, and the cooking shows: precise sauces, careful seasoning, beautiful presentation — but always in service of flavour rather than as an end in itself. The menu is structured around Cretan produce: local fish and shellfish, mountain lamb and goat, wild herbs, aged cheeses, and the extraordinary quality of Cretan olive oils.
